Falafel Burgers with Tahini Sauce

Today’s post is all about simplicity

It’s the small (simple) things in life

I am super excited to report that I have family visiting this weekend! I want to spend as much time with them as possible; therefore, I won’t be spending as much time in the kitchen. Luckily, a couple of weeks ago I found a recipe by Andie Mitchell at Can You Stay for Dinner that inspired the fabulous meal below. It can easily be served for lunch or dinner.  DELICIOUS and SIMPLE! Hope you all have a special weekend!

Falafel Burgers (adapted from Can You Stay for Dinner)

1 can garbanzo beans, drained & rinsed (25 oz)

1 egg

1/3 c. onion

1 T. parsley

½ T. cumin

½ T. coriander

1 t. chili powder

1 t. turmeric

1 t. Spike

2 T. brown rice flour

Place beans, egg, & onion into food processor and pulse until smooth. Add spices & flour & pulse until mixed well. Form into patties and cook. I cooked the burgers at 350 degrees on a griddle until golden brown on each side.

Tahini Sauce

2 ½ T. tahini

1 t. lemon juice

1 t. Spike

2 1/2 -3 T. water

Add tahini, lemon juice, & Spike to small bowl. Mix well and then add water stirring mixture again. Use more or less water depending on how thick you would like the texture.

Add the tahini sauce to the top of your burger or enjoy some edamame  dip. I couldn’t make up my mind so I had both, one topping on each half! :)
